Standard bottles are usually rated for 3.0 vols of CO2 or less as most beers are from 2-2.5 Vol. The caps won't ever be a problem as their seal is strong enough to hold the pressure. I cap a lot of mine especially sample bottles. If you are wanting to use regular 12oz bottles similar to what's available in most commercial beers, I wouldn't recommend it. I dry hopped about 3 days in and let it rest on the dry hops the entire time. The second batch was done in a similar fashion but I let the beer rest for about 6 weeks before packaging. Much better results. I really like adding the dry hops during fermentation so that all the of oxygen is scrubbed out. I was planing to brew this recipe and...Hi everyone,<br />I was planing to brew this recipe and I just realized I don’t have enough strisslespalt at home, but I have Stygian Goldings at home with ( about 2.5 AA). I was planing to add something about 15 IBUs at 60 minutes with the strisslespalt I have and then add about 6 IBUs with Styrian Goldings at 10minutes. Do you think it will have a big impact on the flavor of this recipe? I use the hop spyder so I don't really need to wait long even though I usually do a short whirlpool. I let the hops drain as long as I had time for but in the end they definitely cause some loss in overall volume. I think Motueka has a lot more fruity charac...Hey! I think Motueka has a lot more fruity characteristics than Saaz. Personally, I would like this beer with Saaz though so I would definitely give it a try.<br /><br />BE-134 is supposedly a DuPont strain. It gives lots a pepper and a good amount of fruit character. Belle Saison is a bit more one dimensional maybe but it would definitely work in a hoppy Saison like this one!<br /><br />I do think the carbonation is a bit better with Bob's method. We have figured out that the amount may need to be played with as this is only coming out to around 2.5 volumes of CO2.
